16.58% ABV Barrel Aged Imperial Stout - Cromarty Brewing Co. Anniversary XI clone recipe

Sorry I missed this - I think that if yeasts are healthy and plentiful, and fermentation looked after (temperature control especially) they can go beyond their stated alcohol tolerance - these are limits the manufacturers are promising you they'll work at. But I've only really pushed it with...

16.58% ABV Barrel Aged Imperial Stout - Cromarty Brewing Co. Anniversary XI clone recipe

I would strongly recommend this recipe, by James Morton from his book Brew (lots of other good things in the book, too). It's seriously intense, with a little malt sweetness that works for me (but then, I don't really like any lactose sweetness in a stout - I find it cloying even in small...

    General AG brewing questions.

    1. I don't know the Brewster 40l but if there's any kind of filter / false bottom before you pump out I would just put pellet hops loose in the boil, that'll use them best. 2. No need to take them out before cooling. 3. It's fine either way. If you do put it in the FV it will indeed just...

Why bother with brew days. This kit is stonking.

9 or 10 years ago I made a Woodforde's Headcracker (barley wine) kit, notes are long lost but pretty sure I made it a little short aiming for 9%, and dry hopped with EKG, just because the other "premium" kits at the time did that. The thing is I made it in advance for family Christmas, which...

    Bottle crates & immersion chiller

Had a clear out and I've got six crates I no longer need (these stack but *not* with the bulk of the bottles I have as they're a tiny bit too tall), and an immersion chiller with hose connections (had plenty of use but not recently so needs a good clean). Free if you can collect from my front...

Adding sugar to cider kit - or not?

So, I make cider (from kits and/or juice) mainly for my wife, who likes it. I've made a couple of times the Ciderworks Superior Apple Cider kit, which goes down well, and I'll be brewing it again shortly. But it ends up north of 6% abv and I've been asked if it can be brewed to a lower alcohol...

    NEIPA bottling

Well there's a bunch of things you could do that might help, even if some are rather fiddly. Especially if your fermenter has a tap so you can bottle straight from it: - absolutely don't rack into secondary or bottling bucket. Don't even open the fermenter after you've added dry hops. - If you...

    head lacking on my beer

Can be just time, I find? I had a porter that had disappointingly no head until it had been in bottle for about three months, then suddenly all good.

    Newbie first brew questions

    1. I brewed BIAB with a Peco boiler for a while and dunk sparged in a spare bucket because I thought I ought to. I think it's the most awkward part of the process and you do need some other bucket (or suspension system!). It's certainly fine not to and if you're doing half batches no issue...

    Grainfather chiller hose connection

Hello, @chrisbjones202 - this looks good and I'd like to do something similar but can you (or anyone) tell me what the green widget in the picture is? Looks like it's connecting 15mm compression end of the valve to the gf adapter...I think...? Many thanks!

    April Competition - lager/kolsch/pseudo lager

Hello, not done this before but have a Kolsch that should be ready - is there still time? I could put a bottle in the post Monday.

    Digital thermometer in fermentation bucket

I drilled holes in my (plastic) fermenter lids and pass the probe from my inkbird in through a cable gland, which tightens up to make a good seal. Works for me (I'm sure all the other methods work too).

    Yeast harvesting / washing question

Thanks for the advice, very helpful. I think I will try Dutto's spoon technique. No disaster if this one doesn't work out. And I've already overbuilt my starter for tomorrow's brew so will be much easier to store that one. Never thought of that before reading about it here.

    Yeast harvesting / washing question

I'm a bit confused about this - seem to find conflicting advice. I've finished fermentation of one batch, and then swilled out the fermenter and left the results to settle in a clean bottle (that's what's in the photo), presumably this is mainly trub and water. What of this should I keep, and...

Your First Grainfather Brew - A Walkthrough

Nice one. Similarly, do not check the temperature, etc, and get the wort pumping happily into the fermenter, then wander off to do something else for ten minutes, then come back and find that you forgot to screw the tap back into the fermenter when you sanitised it... and have pumped *quite a...

    Various free things

I have just cleared out the shed and have some brewing bits that I'm not using. They are as you will read somewhat miscellaneous and very much "sold" as seen. I don't want any money for them but you'll have to pay postage unless you can come and collect in Brighton (Sussex). - Peco boiler, plus...

Can I reduce long mash and boil times?

I don't find my calculations are so accurate (or rather, my process that consistent) to make detailed calcs helpful... so assuming your Klarstein is not so unlike mine I would: start with enough water to make a reasonable mash, prob as you say a bit more than the recipe says; sparge to 25l (or...
