How does it work? I gather a new hole has to be drilled into the lid. Then there's the question of sealing it. Any ideas?

Do you need to? Most people just attach the sensor to the outside of the FV, with some padding over it for insulation then gaffer tape it in place.

As MmmBeer says a bit of bubble wrap or a sponge held in place with some tape will do the job, this method is used by a lot of members here.

You need the wi-fi jobby. Avoids drilling.

Into the side would be better as you should have sufficient head space. Use a weldless thermowell with a thermometer, will be a different reading than sticking a thermometer to the outside can be as much as 8 degrees C.

I drilled holes in my (plastic) fermenter lids and pass the probe from my inkbird in through a cable gland, which tightens up to make a good seal. Works for me (I'm sure all the other methods work too).

Aquarium sticky thermometer. But not bothering: it's going into a closet that's circa 19º whole year long. But blu-tack would work as a sealant I guess.
