Dry hopping

Your false bottom will trap most of the pellet debris, those bits that get through won't do much harm. If you recirculate then the hop debris will eventually mostly sit on top of the false bottom. Don't fret. I always use pellet hops, recirculate and have a kettle style element. No false...

I can kind of picture a Saison with H. Blanc in my mind. Theory being a bit of fruit to balance out the spicy yeast? I never appreciated H. Blanc in a larger and have used Renata for bittering. Did I not give it a chance?

Yep, fans running too fast. My homemade stirplate does the same if I crank up the voltage.

Sometimes you can move your PB somewhere a little warmer for a few days and the yeast may be pressed into producing some more co2. I sometimes manage a whole PB without having to re-prime or give it a top up of gas.
