    Snow Day Brew Day.

If you have the time, I would be interested in your assessment of the BM and how it compares with the other brewing setups that you have used. How well does the cooling jacket work?

    Low alcohol beer... botulism?!

The attached web article gives a balanced, scientific review of the hazhard and risk related to botulinum poisoning in brewing. A key protecting factor in normal, all-grain brewing is low pH and this needs to be checked when brewing low or no alcohol beers, particularly, if using no-chill wort...

    Hazelwood Brewday

Have you tried leaving out the 10min hop additions and increasing the hopstand additions? Personally, I wonder whether so-called “flavour” additions are worthwhile compared to post-boil steeping but I haven’t yet done an experiment to compare.

    Hello from Surrey

I’m in Godalming. There seem to be quite a few of us in Surrey - perhaps, we could meet up when it‘s safe again.

All Grain Brew - Topping Up With Water

Exactly what I do. I brew 36 litres in a 30 litre Burco Cygnet. I calculate the ingredients for 36 litres into fermenter and add a 20% more bittering hops. @darrellm that’s what many commercial brewers do. It’s called high or very high gravity brewing depending on the wort gravity. It needs...

    Bittering hops impact

I’ve read both the Brulosophy Exbeeriments. The first, with 24 tasters, concluded that there was no ststististically significant difference in the results from the triangle test between the beers with 60 minute and 30 minute additions. The second, with a single taster who knew the nature of the...

    Bittering hops impact

Like @An Ankoù, I use high alpha-acid bittering hops to reduce cost and wort losses to hops. Mostly, I use Apollo (17-19% A/A) or Magnum (13-14% A/A). As @Northern_Brewer describes there are differences in the quality of bitterness depending on the particular alpa acids in the hops and the few...

    Immersion, Plate or Counter Flow?

@AdeDunn, I agree on the importance of a hop filter. I found my Chinese stainless steel basket tends to clog up (mesh too fine for hops) so switched to a helix which works well. I try to minimise wort losses by running freshly a litre or two of boiled water through the hop bed, pump and chiller...

    Porter - Coffee Addition

I’ve tried adding dry whole beans and dry ground beans to finished beer - like dry hopping. My logic being that beer would extract both water-soluble and ethanol soluble flavour compounds. Unsurprisingly, the crushed beens had a stronger flavour for a given rate of addition. I thought the coffee...

How Do Commercial Breweries Bottle Condition?

I cold crash to 4C or below then fine in the original fermenter before transfer to serving keg/bottling bucket. This gives me clear beer with low levels of yeast sediment. It does take up refrigeration capacity unless the ambient temperature is low (like now). Lallemand Nottingham yeast is...

    Easy Keg 5L

Just ensure the CO2 is off and pull the tap out. I found that I could get about 11/2 x 5 litre kegs dispensed with one 12g CO2 cartridge. I found that a carbonation cap for PET bottles (without the middle bit) will screw on instead of the CO2 cover and have used CO2 from a Sodatream cylinder...

    Problem with brew fridge

I agree with @Bill_g, only plug in the heater to avoid the fridge cutting-in if the temperature overshoots - that’s what I do (and the converse when the ambient temperature is higher than fermentation temperature). You could also try to put a false ceiling made from expanded polystyrene or...

    Ss mashtun owners. Preheat rituals?

I find hitting mash temperature a bit variable with my 38l s/s Thermopot - I pre-heat it with the strike water about 10C above mash temperature then drain it, re-heat the strike water based on grain temperature and quantity, put grain in the mash tun and mash-in by underletting. V. similar to...
