    UK Bottled Water brands

    Most people who don't use RO water + chemicals tend to use Tesco Ashbeck. I use it for NEIPAs and it's great. Most bottled waters are very different. Saying all of that, I've just done a Duvel clone using Ashbeck and it's got "that homebrew tang" So I guess it might depend on what you're brewing.

    I mean, I can make you a 10%+ ABV liquid using mostly water, sugar, bran and bread yeast. It takes a few minutes, takes off like a bomb and is done in 2 days. I'd point out here that you wouldn't want to drink it (unless you were in prison or something).

    'Fizzy' mead

    Yeah, mead isn't great from the get go. Needs to mature. I'd say yes, degassing is probably the thing. Might be worth giving it a really, really good shake to get the gas out, then put the lid back on for a bit. Personally, I made a simple mead and deliberately made it semi-sparkling.
