    I agree letting settle over time makes its more compact and less liable to move, for sparkling wine don't be afraid to let it settle for longer periods you will be amazed how long the yeast can come back from and if not sure then add a little ec-1118 with the priming sugar that will set it off...

    Good to hear I was the same when i started followed kit instructions now i brew and store it longer, time is the secret ingredient ! Wine taught me this yes you can drink it as soon as cleared but it gets MUCH better with age likewise stout

    Welcome to the forum can't go wrong with turbo cider its great and you can use just about anything with apple base to make cider. Kits fir beer can be altered as well ie use Dried Malt Extract in place of sugar adding your own hopps etc loads of good advice in here.

    wow that some ageing sorry not familiar with mead but yes degassing does help with wine or still cider also helps remove the homebrew twang some mention in terms of taste and smell. I may be wrong but don't see why it can't be degassed good old shake or one of the plastic coat hanger jobs work...

    Well I am more a cider and wine type, but have used a Cooper Irish Stout kit changed the yeast for CML BEIR, used a mix of extra dark and light malt dried extract instead of sugar and steeped some chocolate malt as well to add turned out rather good not Guinness, but a very smooth and deep pint...

    I generally leave indoors for 2 weeks once carbonated then at least 2 weeks out in the garage or shed, even a turbo cider left for 6 weeks carbed up ok when left for 2 weeks
