    Simple Questions On Racking

    Hi guys. When you transfer the wort to secondary fv from primary, surely this removes the protective layer of CO2 over the wort? How does it not spoil? I can't get my head round this, surely it is at risk of spoiling? How long would you then leave it before bottling? Thanks.
