    Apologies for replying to my own post. Just searched the forum on rehydration - some say not necessary, but think I'll rehydrate with cooled boiled water - unless anyone can convince me otherwise in the next half-hour.... :)

    Run out of malt extract!

    Ah! Good point! I normally use a heated brewing belt and have had the odd overflow during the early stages of fermentation. I guess I'll also have to strike a balance between getting the ME warm enough to dissolve but not so hot it kills off too much yeast. I'm looking forward to trying this...

    Thanks Rob...by the time I picked up your email I'd pitched in the spray dried malt, most of the water, and chucked in the yeast. I've given it a good stir and snapped the lid on, so hopefully the yeast will at least kick off tonight, but then I'll have to stir in the ME tomorrow. Fingers...
