    Hi Damon, I usually ferment in a bin then transfer to a barrel or bottle but I guess you can drink straight from the barrel and obviously works for you. If the FG is 1010 then I would say its finished fermenting so can't see why you can't move to a colder area to clear. I would check the FG...

    Hello there, Fizziness shouldn't be a big problem unless its fizzing out of the bottle in which case it will definitely mix up the sediment. The sediment should become more stable the longer its left so perhaps leave it for another wee somewhere cool and see if this helps. I know its not easy...

    STILL HAZY

    Hello Crouchy, 7 days to clear a wine is not a lot. I would definitely move somewhere cooler, ideally with a steady temperature as changes in temp will not help it clear. Give it a good stir from time to time and try racking off if there is a sediment forming. All wine will clear naturally...

    LME or DME???

    You could do this but you would have not control over the hop flavour so I guess you would need to make some up and see how it comes out. I have no idea what hops they use for this. You may get a beer that suits your tastes but I would imagine you will get better results using DME and hops...

    First post and a bit confused

    Okay, not sure about the apple taste and high alcohol, it will probably taste a little drier. It's not a problem to take the lid off after a couple of days and have a taste, just make sure that anything that touches the liquid has been sterilised. Check that the fermentation has completed...
