Hi All,
Would like to bew my first all grain Lager.
Fermenting at 13 deg is going to be an issue for me.
Can I simply put my FV with its heated water jacket in a fridge and use an inkbird to control both without any mods to the fridge's thermostat?

I suspect that would work. I have never had to modify the thermostat on either my keezer, kegerator or fermentation fridge. As long as the heated jacket fits in, I imagine it would be fine (I'm not sure how big they are or how they work).
 
Just don't use a fridge freezer with anything in the freezer compartment as the inkbird won't be able to control the fridge section independently, it will just turn off power for the whole unit when needed.
