I have some Nottingham and S 04 yeasts in the freezer. Would I be able to use any of them for my Coopers kit instead of the one supplied. If they can be used would there be much of a different taste at the end.

Nottingham would be the prefered yeast for that. S-04 can leave a fruity bready flavour whilst Nottingham is neutral.

However, check the batch number on the Nottingham. If it ends with 88V, don't bother. There's a problem long lag times leading to greater risk of infection. There are a couple of other batches affected too, but I don't know the numbers.

The yeast I have has lot no 1087117102 and in very small writing on the bottom right is displayed 1085711 - 2. Seems like it should be ok.
