Mornin all.Going to get a porter on the go today and hoping to get full use of my 50l kettle and brew 30l. Then putting into 2 f.v's.Was thinking of using safale 04 in one trying a different yeast in the other. I've got an out of date notty(febuary) and a winsor. Can't remember ever using before, maybe the notty when i used to do kits. Or stick with the 04. Any suggestions most welcome. Thanks ,Dave.

Hi i have used both nottty and 04 both turned out fine ales
 
Am splitting into two 15l batches was just thinking maybe experiment. Though do have two packs of 04. Would have used the 04 if was only doing 1 batch. think it was more of an issue as in which one between the notty or the winsor. So notty it is then. Any issues with it just being out of date 02/16? has been kept in the cellar at 10 to 12 c. cheers, dave.P.s Water boiled, just waiting to cool to mash temp. Doing B.I. A.B. By the way.
 
I've always used s05 for my porters and been very happy with the results.

only problem i've had is that it always escapes from the fermenter, very lively!
 
Thanks.Doh, sorry i meant 0-5. Managed to get 17l each into 2 f.v's, so put 0-5 in one and notty in the other and see how we get on. When i made the starter the notty looked very lively. Cheers, dave
 
Davereal: That's absolutely the best way to decide which yeast is best. Split the wort and use a different yeast on each. I'd love to try that but don't have the fv's for it.

Yes I know I could split up into 5 litre water bottles and jerry rig an airlock but being honest that's not going to happen!
 
Ok. Both lids a bulging, the notty keeps blowing the lid, thou the lid has a kink from when it buckled from a vigorous ferment before. So just pressed tight 3/4s of the way round and a bit loose the rest.So all good,something's happening. cheers,dave
 
Always happy with S-04 for Porter. Quite liked Mangrove Jacks as well. Cannot remember the number, but it lists porter on the packet.

Edit - see you meant S-05. Interested to hear the results.
 
I know you've done it now but next time, you might want to consider the attenuation of S-04/Nottingham/US-05. S-04 is about 75% Notty and 05 are 80%+ so if you want a more sweet porter choose S-04 if you want a drier one notty/05
 
Er yeah, Still a novice and not really got to grips with attenuation etc. So its a bit learning on the job as i go. Let's see what happens.I prefer a drier porter but as long as they're drinkable i'll be happy. Went for a fullers ish clone . here;s my scaled recipe.30l batch. Golden Promise 6807g. Crystal835g. Brown 520g. Choc 520g. 90 min mash. 85g fuggles start 60min boil. 15 fuggles last 10. Start and original gravity,s spot on. Ended with o.g 1.055 and two 17l batches one pitched with notty and one 05. i'll let you know how they fare, cheers, dave
 
Dont worry about the techincal stuff then. I made a fullers porter clone a couple of times I (iirc) also used notty. I came out tasting almost exactly the same as the original
 
O.k. Update. Pitched last saturday about 10 p.m.Both looked to be starting about mid sunday afternoon. Monday, the notty had a 1 to 2 cm brown wet bubbling head and the 05 a big fluffy beige head. Tuesday the notty looked pretty done, By wednesday done. Took a reading , down to 1.014 from 1.055. Spot on. The 05 was still going strong wednesday, yesterday looked to be dropping, all good. Will leave at 20c till next saturday. Any advantages to dropping to cellar temp about 12c for the last couple of days?The trial jar tasted fine also. Cheers, Dave
 
Dont do this. As the the yeast may not be able to clean up after itself. This happened to me recently as my kitchin was quite cold at the time of brewing and I had some diacytyl in the beer which took a month to clean up Only drop it to celler temp after your sure it's completely finished fermenting
