Yeast for a kit-mod RIS

Hey everyone,

I'm going to do a silly kit mod to try to get a mega-stout.

- Muntons Gold Imperial Stout as the base (3.6kg hopped LME)
- 1.5kg medium LME
- 1kg dark or medium DME (or maybe some exotic sugar. muscovado, treacle or something...)

Brewed short to 18 litres.

I think that gives me an OG of around 1.105. and a likely FG of 1.022 ish so an ABV around 10%.

Questions are:

1) What yeast should I get to deal with this monster?
2) I've got some EKG in the freezer - should I boil some for a hop tea for part of the liquor?

I'd go with Nottingham. Windsor is a possibility but not very good attenuation in my experience. And yes to the hop tea, otherwise it may end up rather sweet with all the unhopped extract you're adding. Maybe boil the hops for a while to get more bitterness and less aroma.

So the recipe will be:

Muntons Imperial Stout kit (3.6kg)
1.5kg LME
500g Dark DME
somewhere shy of a kilo of muscovado
A boiling of some EKG - no idea how much and for how long but I'll try to work something out

Brewed short at 18 litres

Whatever EKG I've got left after the brew for a small dry hop

Your other possibility is to use two of the stout kits plus the hop tea for some freshness. I did this with a coopers Irish Stout (2 Coopers cans, 1 kg dark spray malt and 1 Kg brewing sugar) so two 3 kg kits brewed the full length should give a 9% stout I think.

No I am not kidding, the stronger the beer, the more yeast you need, you do not want to be stuck with a slow fermentation and an age to get to the FG in a beer of this gravity.

I would just use a standard colour malt extract rather than the amber which may well turn out to be less fermentable than you think. You have enough colour and roast character from the Stout kit anyway.

You could take the sugar up to 1Kg with no issues in a beer that strong, and it will help drop that FG just a touch more.

RIS is not known for having much hop aroma so I would move the dry hop addition to the bittering.
 
...just thinking...

Seeing as I have to pop down to Rob's to pick up some more Notty...

...would any steeped grain additions be worthwhile to this crazy beast???
