I do have some tannin on order which should be with me in a couple of days.
So another silly question - can I chuck a bit of the tannin powder in once it has been fermenting a few days without causing ill effects?

Not if you've already used a tea bag, a bit of tannin is necessary to give wines a little bite or astringency, too much will make wines harsh or leave a dry aftertaste.
