Right im planning another brewday soon, that is as soon as i finish the decorating. And i was thinking of this.

Brew length 30ish ltrs

6Kg Pale malt.

100 grms Fuggles - 90 minutes
25 grms Challenger 15 minutes
25 grms Pacific Gem 10 minutes

Yeast - S04 + T58

So the question is, would this work?

Is that S04 in addition to T58 or just one or the other? Everything else is the makings for a nice pale bitter but I'd leave the T58 alone and go with strictly the S04. T58 is really marketed and intended as a Belgian yeast (although I've not heard good reviews on it and you can do much better with liquid versions). The T58 just seems out of place with that malt/hop bill. That's just me though, YMMV (nod to Tony if you are reading this... :-) )

Yes Phettebs its in addition to the S04, as S04 is my yeast of choice but in a young beer ive noted that there is a brediness taste to it, so i was thinking of also using the T58 to try to eliminate that. But i might also use S05 or Nottingham.

CB.. I'd go with the Nottingham if I were you, I've found that it leaves a nice dryish taste in a good pale ale. Have to agree with phettebs, not heard good things about the T58.

Nice recipe though, I think that Pacific Gem will give it a nice twang at the end. What's the aa on them?
 
I`ve brewed simular pale ales with those hops and your onto a winner :thumb:

I would use US-O5 over the other yeasts you mentioned every time :cheers: I only use SO-4 in best bitter type brews with some darker malts as I agree about the bready taste and find a little choc or black malt hides this and works well together.
 
I once did an all pale malt brew, it seemed to lack the body that crystal malt gives it.
Could just be me of course.
 
I find 100% :thumb: pale malt brews really let the hops shine through but I also like the balance that you get by adding a couple hundred grams of crystal, amber and wheat malt whilst still retaining a great pale ale :thumb:
