does that risk the beer going off if you leave it in the bucket for too long?

Only if left for a long time. Also, keep opening the fv will increase the risk of infection. So best to leave it closed (altho it's bloody hard)

Just barrelled it today. Was sitting at about 1014 and not doing much, maybe a bit of fermentation left but owing to the fact I started it off too high T and because I didn't want to risk leaving it too long I decided to go ahead. Each time I do this I like to keep the sediment, because I think you can reuse it if you know what you are doing. I don't so I am not going to do that, just yet, but I like to keep it anyway and observe.

I've noticed this happening a few times.

Does this mean that fermentation is still going on?

Can I use it to make bread?

Probably not ready quite yet but it's got a bitter after taste and seems a bit dead. Maybe it needed more priming sugar? Thinking about added some more.

I just added a bit of brewer's sugar to it a pint and stirred it, improved the taste slightly and made it a bit more lively, a bit of head and that. Should I take the cap off and bung in another 50g? Already added 90g.

Was up at around 24-25 for a few days, frothed up really fast. It does say it needs 14 days to prime on the box.

Take them back to the warm for a week or two and it will be fine. A few days isn't really long enough and 90g is plenty of priming sugar

It's in a barrel, hence the possibility of adding more sugar. Sitting at about 20ish, whatever the temp of the house is.

I have never kegged anything but I think you can only prime with a max of 100g of sugar or they can start to leak/split. Fingers crossed someone that knows more about kegs will see this.

Was thinking of just pouring this into the 2L bottles I am preparing for my next brew and using the barrel for that. Or just sup it. Maybe it will improve.

Having a pint now, after 6 days of priming. It is improving, but I sense it needs longer than most beers to mature, which is why I wish I done the cooper's one first and then this. It's definitely one to store for a while and have the odd one on a cold winters nights. I am thinking about buying a bottling thing and trying to decant the contents of the barrel into 2L bottles. once the barrel is empty I could then presh it up with some CO2 and give it a quick blast of pure CO2 from the tap, lid and put away somewhere dark, maybe with a tiny bit of brewer's sugar added to some, for future research.

Is this a bad idea? I also would like to barrel my Cooper's in case 2L plastic bottling it ***** it up, it's the first brew where I feel that I have done everything right this time and it should work out and would prefer to barrel it. Would rather take the risk with the nog.
