Witbier question

I brewed a belgian witbier on Sunday and after an initial vigorous fermentation it has almost come to a halt. It had an SG of 1048 and I just took one at 1010 which was my target for a 5% beer. I have only done two AGs before so am a bit of a novice and they fermented away for a good two weeks. they were both ales using safale 04. I used Brewferm blanche for this one. Should I bottle now? (actually it will have tobe Monday as going away for the weekend)
 
Give it a while for the yeast to settle out . . . I know that Witbier is supposed to have yeast in it . . . but you don't want too much

. . . . I've been associating with the bad people on this forum too much and pulled of a pint of my Half Wit from the FV . . . a few people around me suffered a bit the next day :oops:
 
Thanks for the advice. There's a good 3/4 inch of yeast settled already but it's very cloudy still. I'll check again Monday with a view to bottling later next week.
 
Like Aleman says, no harm in giving it a few days yet for the yeast to bed down.

Belgian yeasts are typically VERY aggressive at first, then just as quickly dig their heels in after a few days.
