Help me out here please.

I was contemplating a brewday next Saturday (when Mrs. Mole is working all day) but there is absolutely no reward in doing ‘housy stuff’ to please her this weekend (if you guys know what I mean), so brewday might be brought forward to tomorrow :D

I have at my disposal:

6kg crushed Pale malt
500g crushed Chocolate malt
250g crushed Black malt
125g crushed Crystal malt

Proper hops from BB:
100g Pilgrim (similar to Target / Pioneer)
70g Boadicea (replacing Challenger)
80g Aurora (super Styrians)

Left over, from my LHBS:
70g Naff Northdown
40g Grade ‘B’ Goldings
15g Feeble Fuggles

I could do something similar to Wheeler's Old Peculier clone, reduce the Crystal and bump up the Chocolate.

Any other suggestions would be welcome :cheers:

For me i'd go with this, I think a winter warmer should be a deep red/brown colour and be a story of malt so I've left out any steep hops.

Based on 23L and 75% efficiency

Mash 90 mins 66c
Boil 90 mins
Target OG 1.059
Target IBU 38

5500.00 gm Pale Malt, Maris Otter (3.0 SRM) Grain 95.49 %
115.00 gm Caramel/Crystal Malt -120L (120.0 SRM) Grain 2.00 %
115.00 gm Chocolate Malt (450.0 SRM) Grain 2.00 %
30.00 gm Black (Patent) Malt (500.0 SRM) Grain 0.52 %
Pilgrim 90 mins to 30 IBU
Pilgrim 15 mins to 4 IBU
Boadicea 15 mins to 4 IBU

You don't need much black malt to make a difference to the flavour / colour but well worth having it in there for the roasty/toasty flavour. 2% Crystal and 2% Choc should work well. You could mash a bit hotter 68c if you wanted the beer to have more body/sweetness.

If you don't brew this thats cool, I think I might though :lol:

What ever you do, have a cracking brewday :thumb:
