Wine - How long can be left before bottling?

My late Novemeber 2019 5 gallon of Wilko white wine has been rather better appreciated/ enjoyed by friends and family than I anticipated, so now I have just put on another batch of the same, but with what I had left of the first batch in bottles and a pressing need in a few weeks to bottle batch #2, I was fancying putting on yet a third batch - but this time Wilko 5 gallon red wine.

I certainly will not be able to bottle it once its done, but would it be OK to rack it to a second 5 gallon vessel and allow it to mature in that some while before bottling please?

Yes think of a Demijohn as a big bottle :thumba:

Some members prefer to use a solid bung but i would use a airlock as there is no risk of it being pushed out by any activity left in the wine after stabilising. (don't forget to keep an eye on the airlock so it doesn't dry out)

Thanks for the reply - another week or so and I can put a red on..
