I am new to this. I have read that prior to bottling the wine needs to be vigorously de gassed removing carbon dioxide. Also avoiding oxidation. But surely when it is agitated the CO2 is basically swooped for air????

I use a dagassing wand in a cordless drill so if adding air was a major issue I would have ruined many gallons of wine over the years.

Hi. Ok. I am about to transfer from primary fv into a clean vessel with a tap. Do you suggest degassing at this stage when transferred. Then leaving before bottling.

If you intend to make more wine make or buy a degassing wand as they really do save time and effort, if you only have a long spoon rack to the vessel with the tap give it a good thrashing to release as much CO2 as you can then add (assuming its a kit) the stabiliser and finings as instructed, you don't need to degas for many minutes i would say a minute vigarous stirring will do it (do it in both directions which will help release the CO2)

Hi. Yes wand on order. I swished this time after transfer. Shall I bottle tomorrow or leave in leave in vessel.

Is it a kit?,what size? Might need a couple more goes of degassing over next couple of days by hand, then you need to add some finings(clears in days) unless you plan to leave it to clear naturally( maybe months).

If you have used finings it should clear in a day or a few days depending on which you used, don't bottle until its clear or you'll end up with sediment settling in the bottles.

Hi. Yup. Probably 10 days in. Took a sample bottle, when I was transferring to secondary bucket for bottling. Wow it is as clear as a bell and tastes like really good. Very smooth indeed. Young’s 7 day Chardonnay. Should be better in a few days when bottling. I will keep ten bottles to see how they age for a few months. Thanks for the advice everyone.

The Co2 is in suspension within the wine, all you are doing is forcing it to release itself, no different than shaking a bottle of cola before you open it, the only thing that would be swopped for air is if you allow liquid to gush out.

I have been lucky and was given a vacuum pump , just need to get a gauge so I don’t make the demijohn implode but am looking forward to using it for degassing as I find it a pain in ass
