I have never used willamette...

Some guidance please...

Do you use them as bittering or flavour / aroma

I going to make a best bitter style beer...
 
I used williamette in a Proper Job clone - at 15, 10 and 1 min boils. So flavour and aroma for me :thumb: Great hop that i used with cascade and chinook :D
 
Hi

Willamette is a lovely hop, substitute for fuggle and gives a dark fruit flavour. Good for dry hopping to. You have got to love those Yankie hops!!

I've just done a proper job clone too using Willamette late in the boil, just racked to secondary so I am not yet really in a position to evaluate the taste in my brew.
They smelled absolutely lovely out of the packet though.....very fruity as mentioned.

I will late hop... but not too much.... i want a tone not something to over power...

i know proper job and you can really pick it out :thumb:
 
I am lucky enough to get 'proper job' and 'tribute' on draught at my local. Superb stuff these days such has been the change at st austell ales. I was drinking Admirals Ale last night, it won an award as the best bottled beer last year, its lovely. I think its cascade hops. I have some willamette and some cascade at the mo and am looking for a recipe to use them, not necessarily a clone of a st austell, just something with that light taste and sweet almost toffee/caramel aroma. Any faves out there? I did sierra nevada pale recently but its not great, a bit oily somehow, perhaps the mash temp was ****?

I'm really looking for an excuse to spark up my new 60 litre boiler!

22kg Pale malt
1kg Flaked Barley
1kg Crystal
140 Chocolate

200g Challenger 90 mins
40g EKG 15 mins
40g Willamette 15 mins

Water treatment
3 X Wirlfloc
SO4

When i've done the boil i will divide the wort into two FV in differnt proportions to make 1 brew at 1037 and the other at 1048..
The divided wort will be diluted with pretreated water.

The target is 50 litres of each brew

The result was two very good brews. but not sure if i can pick out the willamette...

In a few weeks i will be making a 1040 ale with similar colour to Courage best a bit more depth coming from more crystal and choclate than the one i just made and i will add double willamette to make a nice friuty number. :pray:
