Been thinking of brewing a Coopers Imperial Russian Stout since I got my FV as I am into big beers, but................ I am considering adding a can of dark malt extract to go with the cans of Stout, Dark Ale, Lager and 1Kg of Beer Enhancer that is on Coopers recipes page on their website for the R.I.S
Has anyone tried to crank up a R.I.S this way? If so what was it like? Will I need more Enhancer? Will the FV cope with the extra malt (fermenting wise?). Coopers say the new FV is suitable for brewing their R.I.S but I want to take it up a notch.
I am a bit of an experimenter, cannot just put one beer kit in with the appropriate sugars. I have got a few 2 and 3/4 can brews planned for later in the year but for now I am going to get on with what I have and that is brewing an English Bitter with the beer enhancer that was included rather than the LDM. After all, it's my first brew in over 12 years.
 
The biggest issues you'll face are with the yeast. It'll need a very active starter of about 3 packets/vials of yeast.

I've heard about people plopping in some 001/007 in towards the end to finish a RIS off.

Too much malt . . .will need a kilo of sugar to bring the FG down to a sensible level

Aleman,

Are you suggesting an extra kilo of sugar besides the kilo of enhancer Coopers state?

Possibly only 500g in that case . . .

That'll be horrendous. No way I'd do that.

Spend a few quid and get the right yeast.

Thanks for the tip. Think I will drop the volume down to 15L rather than the 20L I was planning. Looking to make it around 15%ABV or so.
 
Good luck getting that to ferment out :whistle: :whistle:

If you are going that strong you will need this. You will also need to make a starter or use it first on a lower abv beer then use the yeast cake.

As Aleman suggested if you have too much malt it won't attenuate low enough and you will have an overly sweet beer. Same thing will happen if you just drop the volume instead of adding more fermentables. High Abv beers is probably the only time it is desirable to add white sugar.

I'm planning ahead with this one which is why I brought this thread up to get plenty of solid advice before I start it.
