Hello,
I finally got to the bottling/wine in a bag stage of brewing this kit (23l) and we gave it a crafty taster. Well the instructions do say ok to drink now "but will mature" I enjoyed it but by joe it was very sweet. Can I unsweeten it? Might it unsweeten itself with age? Its been in the bags now for about three days.
Now my Wilco Elderflower (5 l). Was lovely and not sweet at all. Appreciate any advise.

If it is not labelled as a sweet wine it may not have finished fermenting, did you take a hydrometer reading?

Thanks for the reply. Right on the label, Smooth and light, Hints of lime and the scents of white flowers, 45% grape concentrate. Italiam grapes, But no suggestion of sweet or dry whoops.
Now I keep precise notes of my brewing all except this one aaaah. OG 1060 but at end of predicted fermentation time I went away for 10 days and so thought that as I had given it an extra 2 weeks I was ok. I wonder ? Fermentation room is a good 20/21 deg.

Any thoughts? Perhaps its just meant to be sweet?

Hi Col

Brewed the very same, 15 days in the FV at about 21C and yes as yours turned out sweet. Has mellowed quite a bit now (3 weeks) after bottling so dont despair!
