Hi,

I am doing a Cantina Pinot Grigio wine kit and in my hast to try get the wine ready for the weekend I missed a step in the destructions:

6. Check wine is on or under 1.000 on the hydrometer - DONE
7. Rack off to ensure most sediment is discarded - MISSED
8. Add stabilizer (E202, E224) and degas - DONE

So whilst I was using my win whip to degas - I realised something ... hmmm, I've just stirred up all the lees - whoops (checked destructions, I missed step 7 - rack off)

So my plan now is to leave it overnight and let most the lees settle again and then rack off in the morning - degas again and then add Finings A and continue where I left off.

Being a newbie, and obviously somewhat impatient too I hope I haven't ruined it!?

Cheers,
Matt

It will be fine, most of the kits i make don't call for racking so you complete the wine in the original FV.

Cheers, just the reassurance i needed. :) it seems homebrew is relatively forgiving to the beginner and all those fears of making yourself blind are just silly ... But of course its great to wind up your victims... Erm.. Subjects.. Erm friends.

The most important part of home brewing is making sure everything is sterile, the second and hardest to learn is patience.
