I am unconvinced that there is much difference in outcomes between barley varieties.
The Durden Park pamphlet on Old British Beers seems to support such a suggestion.
Farmers want barley that is disease resistant and has a useful stalk length for straw and that does not appear inconsistent with outcomes for brewers, from the historical perspectives I have come across.
 
Halcyon Malt - Thats interesting, a micro brewery in B-O-T brewed a beer Halcyon Daze (The Old Cottage Brewery) - I always thought the beer was so named as being the drinkers state of mind after a couple of pints. It was a wonderful beer at about 5.5%.
