I am about to brew a Sam Adam's Ocktoberfest clone but I am unable to get to my Home-brew suppliers, I have on hand either a US Pale yeast or Real Ale yeast from CML. Are either of these suitable?
 
Out of those I'd choose the US Pale as it's more neutral and you'd ideally need a lager yeast.
 
Personally, I see yeast as yet another of the zillion variables that make up brewing, so to simplify matters I have decided to just use Wilko Ale Yeast if I'm not intending to brew something at a low temperature. If you have a local Wilko then this is definitely my yeast of choice for all beers ...

It's a Gervin Yeast which comes in 11g packets that can be sprinkled directly onto 23 litres of wort or rehydrated, or cultivated into a yeast starter, or cultivated and stored in the fridge. (I recommend the latter because there has been a recent price increase!):gulp:
 
Tonight I did my first taste taste of a split batch using US Pale, Kolsh and Real Ale crossmyloof yeasts and the US Pale was the one that tasted crispest so I'd definitely go with that. They were all brewed at 20c. Remember to rehydrate and do it in the 33 - 38c range for better viability, especially if you're going to be brewing on the cooler side.
 
I'd use the US05. You can take the fermentation temperature down pretty low with this strain, Fermentis say as low as 12c, but recommend 15c to 22c as the ideal temperature range.
 
I would go for the US and brew it cool 15-18 if you can


Gervin/ wilko is okay does the job reliably would certainly work well for this.. I personally find it rather bland though especially in more hop forward ales.. Most of the time I would pick a different more appropriate yeast for more styles but this it would work pretty well.

Is the US CML the Chico strain from US05?
