It's a surprise brewday today. Decided at the last minute to do a Belgian stout ABV 7.5%
The following is a list of the yeast I have in stock. Which one do you think would go best in this type of stout?

Nottingham
US05
S04
Mangrove Jack's Burton union M79
" " Lager M84
" " Newcastle Dark ale M03
" " Belgian Ale M27
" " British ale M07

I'm leaning towards Nottingham. What do you think?

errr

Belgian Ale for a Belgian beer......or am I being stoopid.

The Belgian yeast that the recipe calls for is wyeast 1762 Belgian abbey which is fairly neutral. The Mangrove Jacks Belgian is peppery/spicy. Not sure about it!

its your call..... :D

I have to say I preferr a neutral yeast...but thats the beauty of all grain...you personally have control..its your preference.

I think fairly neutral too. There's already a lot going on in there with all the chocolate malt, Belgian special B, Roast Barley and Munich malts. I think peppery and spicy too might be pushing it!
