Im doing my first mini (13lt) all grain brew tomorrow and i'm undecided as to which malt to use. I was originally just going to use pale malt and 2 types of hops (Challenger and Golding). After reading some recipes on here im starting to think i need an additional malt. Could someone point me in the right direction? im not really fussy as to the end taste as i like most types of ale. Iv used amber malt before and liked the biscuity taste it gave the coopers ipa kit i was using but i would like to try something different.

any suggestions welcome

Matt

what malt you use depends on the type of ale you want to make....do you want a dark coloured beer, a light coloured beer a sweetish beer

download the free soft wear BrewMate and play around with different ingredients.

The summer ale sounds like a great idea i have fuggles left over from dry hopping my kits so that will be usefull.

Im intrigued by the lemon zest in the brew. does this come out in the final beer as a main flavor or just a back note?

Also the Caramel/Crystal Malt, im using brewmate and the only Crystal malt i can find in there is crystal 10 to 120???? or is caramalt that i should be entering?

Thanks for the replys

normal crystal is around crystal 80, dark crystal is 120.

The lemon zest is just for that little extra "zing" some hops give a lemon taste.
Your Caramel/Crystal Malt is there any label on the bag?? telling you what the color is??
If you go into Brew mate...edit...fermentables you may find it.

Just seen your recipe...no problem....go for it.

Your recipe looks fine but personally, I'd up the crystal to 5-15% of the grain bill.

Best of luck.
