Hi

I just got hold of some Cascade hops today form a lhbs and was hankering to make a APA style beer by tinkering with a kit.

So I was thinking to use a wherry kit plus 1kg dry LME, and a cascade hop tea plus dry hop with more cascade.

Does this sound crazy? I actually bought them to make a batch of Coopers Strong Old ale, but fancied another kit variation with the extra hops.

Any tips of quantities for the boil/dry hop?

Do you have the means to boil, i.e do an extract brew? If so, why not try an extract clone brew of an APA that you like? Rather than the kit, and in addition to your hops, you'll need:

Light DME - about 3 to 3.5 kg for 23L
Campden tablet
Protafloc/Irish Moss
Dry yeast - US-05
More hops! ( :twisted: )

And you can steep some specialty grains like crystal malt for some added interest...

If not, ignore me! :lol:
 
Better brew ipa with added hops makes a good hoppy ipa. I brewed with muntons beer enhancer, a hop tea of simcoe and amarillo and dry hop for the last 7 days with the same combo.
 
I made up my 2nd Wherry back in the Autumn, decided to tweak it slightly this time, the idea coming from another site.

I followed the normal instructions, stiring in an added 250 gms of dried spray malt with the cans of malt extract and boiled water, made up slightly short to 21 litres before pitching the yeast. OG 1048.

I had some cascade hops left over from a previous dry hopped BB IPA, so I dry hopped this Wherry with 30 gms of the Cascade after about 7 days time when the initial fermentation has calmed down. The fermentation in the FV was longer than usual, appeared to be just slow rather than stuck, taking 3 weeks in all. The FG was 1012 so ended up with ABV 4.8%.

The addition of the extra spray malt and brewing short has certainly produced an ale with more body, slightly stronger than your standard Wherry, but still nicely balanced, the added cascade hops also give a lovely aroma. Incidently the original 'tweak' suggests Goldings hops, I just used Casacde as this is what had left over from a previous brew.

I'd really recommend this 'tweak', yes it's pushed up the cost per pint a little, but well worth it in my view. The best kit I've brewed to date.
