Done a few extract hefeweizen brews using wheat spray malt. Only used the wheat bags as most are about 50- 60% wheat and that's what the recipe called for. They all turned out very well and closely matched style.

3kg wheat malt extract
750ml of cherry syrup (65g per 100 ml sugars)
880ml of cherry syrup (85g per 100 ml sugars)
50g of tettnang 3.2% a.a. pellet hops (20 minute boil)
1 sachet of mangrove jacks bavarian wheat yeast
Bloody lovely as was the first brew I did with wheat extract mind you. Keep fermenting temps up for banana/clove flavour. The extract works great.
Thesedays I use at least 500g of wheat extract in my beers to improve the end result :-)
