Wheat Beer using extract -Will this work?

Hi all,

I've had some pretty good successes using liquid malt extract for ales, so thought I'd have a bash at doing a wheat beer in the same way. Thinking of the below, any ammendment suggestions warmly received :) - I'm not sure what the ratio of malt:wheat should be, but as it comes in tins, I'm limited to a choice of 1:1 or 2:1.

3KG light malt extract
1.5KG wheat extract
10g Target (13 IBUs) boil
30g Saaz (aroma)
50g Saaz dry hopped after a week (I also have Cascade?)

Got a wheat yeast, which I'm told is important...

When I brew AG wheat beers, it's 50/50 wheat malt to pale. I think you'd want to up the wheat extract a bit. The hop choices are fine. I'd avoid Cascade unless you want more of an American wheat. What yeast are you using? I love Wyeast 3068.
 
50:50 gives me a bit of a dilema. Go for 1.5KG of each and have a small batch or go for 3KG of each and have something seriously heavy. I do have some Amber malt extract (dry), so could maybe do 1.5KG Wheat to 2KG malt (500g of which is amber) to keep the ABV up in a decent batch size? Not sure I want a dark one though...

The yeast is a Brewferm Blanch dried yeast. The WYEAST price kinda put me off. Maybe I'll leave that one to when my AG brewing days start...
 
I bottled something similar last week (A Wit to Woo on recipes fourm). It tasted great at bottling. Someone on here kindly pointed out to me, when I was asking similar questions a few weeks ago, that wheat DME is not 100% wheat, but 55% wheat 45% barley. You might want to check the make up of your wheat extract unless you're aiming for a low wheat %.
Anyway, I modified the recipe a bit to that on the thread, for 11-12 L I used 1.4 kg wheat DME, 0.1 kg oat malt (for silkiness and cloudiness, but probably not needed) tettnanger hops to give about 20IBU as I didn't have any saaz in. 12g coriander seeds crushed and 15g curacao dried orange peel for last 5 mins of boil. I also went with Brewferm Blanche yeast. It should be carbonated now so I plan to crack one open this weekend. OG was 1.045, FG was 1.010 4.6%. I'll let you know, as I say it was great at bottling.

I brewed a coopers aussie lager with a can of coopers wheat lme primed with 150g of sugar after two weeks in the bottle I'm drinking a very nice pint with plenty of head with a nice wheaty type alely taste I love it ended up at 4.8 %

My wheat extract appears to be 100% wheat. It's Brewferm's again. Also found the orange and coriander thread, so thought what the heck...

Ended up going for

1.5Kg LME
1.5Kg WME
300g Amber ME
10g Target for an hour or so - IBUs might be a weeny bit high at 15.6
33g Saaz when off the boil
30g orange peel
16g roasted and crushed coriander seeds.

It's cooling at the moment, but will go for 20l, hopefully with an OG of 1.050 or thereabouts and an ABV of about 5%.

Keep me posted, I'll put up a piccie when it's ready.
 
Looks good. I don't think you'll be disappointed. I also bailed out on the liquid yeast until I go AG, which would be soon if I hadn't ordered so much DME...
 
Just back from a week in Burgundy, where this brew was blind tasted against Hoegaarden and Hoegaarden Grand Cru. Amongst the panel was a Dutch chap who lives near Brussles and is big into his Belgian beers. It came a respectable 2nd, way better than the bog standard Hoegaarden, but just lacking the depth and smoothness of the grand cru. Dead chuffed with the end result anyway. So much so, that I have just thrown on a heavier OG 1.064 version with a few spicy bits as a Christmas version.

Typically I'd go closer to a 1:1 mix of the malts, however I am normally AG
Just about to try a Peach wheat using fresh peaches approx 7 lb with 4.5 lb Weyermann pilsner, 4 lb Belgian wheat and 1 lb raw blueberry honey 1oz Czech Saaz @45 and 1 oz EK Goldings @ 5. Danstar Belle Saison.
Aiming for a 5.5 gall ferment 1.050 OG and 1.009 FG with a 5.4% ABV and 18 IBU - not totally sure how to calculate the sugar content of the peaches so may end up with a somewhat bigger brew.

Sorry about the Lbs, oz and galls but were still in the dark ages of non-metric. Was actually on the site to see if I could find some Woodfordes clone recipes when I came across your Wibier
