Mine's collapsed and was down to about 1.016 yesterday.

Oddly I find the early sample of wheats utterly vile! :sick: Strange when it will be delicious in about three weeks time!
 
well I tested and its down to 1.010.
should I wait for the yeast cap to sink? im thinking it may ferment out a bit more if the cap is floating still
 
Righto, now for another question.
The yeast that's on top, can I pop some of that into a sterilized container and save it?
 
yes , make a starter with it when you're ready , if you only have a bit make 500ml water with 50 g dme then after 2 days it'll be ready to pitch (wheats beers need less yeast than most ales to promote the esters )
 
the first half is bottled and the second half is on fruit, I went for 1kg of mixed berries, they where 250g blackberries, 250g raspberries, 250g, redcurrants, 250g blackcurrants

should be interesting.
 
I popped a couple of bottles into the fridge today, one of each.
they are clearing a ,little at the top and have dropped a hell of a lot of loose sediment to the bottom of the bottles, im wondering if I want that in the glass or should I try and avoid letting it out odf the bottle?
 
I usually would say mix it up but it may be sediment from the fruit rather than protein and yeast so i would avoid it . Let us know how they taste .
 
well the fruit one is going to need longer conditioning as it was pretty extreme, the standard was very nice.
 
Good to hear it turned out well. I'm going to be adding some wheat to my next bulk order to try out a basic wheat like this. How has it turned out in comparison to the commercial beers?
 
Umm good question, I've only had a few commercial ones but mine seemed lighter and less spicy then the ones I've tried.
It was super refreshing though.
I imagine with practice I will make better wheats.
