Hi folks,

I've made a few successful brews since I last posted on here, but I have a question...

I started a wheat beer kit 2 weeks ago today. It was a pretty hot day and my cold water wasn't too cold so the FV temp ended up being 28C and I presumed it was ruined from the start. It brewed out in just over 24 hours (as I expected for that temp) and I left it since then.. pretty disappointed and ready to chuck it this weekend.

However, I checked last night and it's started brewing out again, looking and tasting good as new, which seems very odd to me because either all the yeast brewed out during the first day due to high temp or it was killed off because it was too hot... Either way there shouldn't be any yeast left to start brewing out again 13/14 days later, or am I wrong..?

Is there any explanation for this?

I don't think 28 is high enough to kill the yeast or ruin the beer - especially with a wheat. Should still be perfectly drinkable.

What makes you think it's started again? Airlock activity can happen when just due to temperature changes..

I would just take a reading and if it's low enough, bottle it. It'll be fine.
