What to do with Apollo and Tettnang?

Just bought some Apollo and Tettnang hops and tryqing to put an extract recipe together but not sure how best to use them.

The Apollo has particular high AAUs, 20% I think. Should I use this for bittering only or can I chuck some in for flavouring/finishing as well? The tettnang is reasonably low so was thinking about using this for finishing, what kind of flavours or aromas have you got with these?

I also have some marris otter but believe they cannot be steeped, only mashed, so should I save them for when I go AG?
 
I am unfamiliar with Apollo Hops so I did a bit of rearch.

As with most very high alpha acid hop varieties this hop would be best suited to big hoppy beers such as IPAs, Imperial IPAs and Barleywines.

It sounds like the aroma is pleasant so you should be able to use Apollo hops for finishing an/or dry hopping.

The citrus notes suggest it may be best used American versions of the above styles.

Tettnang hops are quite nice and are suited for use as finishing or aroma hops. However, I don't believe it would be suited for use along with Apollo hops in the production of the styles I've listed above.

The Marris Otter should be saved for use in making an all grain or partial mash batch.

Cheers Scott, good info on that beerlegends site. Couldn't find much info on apollo online, even where I bought them from so that's great.

Pittsy, after doing some more research I'm thinking about doing an American Pale Ale. Found a recipe in Palmer's book I've modified:

1.5kg pale DME
1.5kg amber DME
200 dark crystal malt(steeped 30 min)

14g Apollo (20%) 60min
7g Apollo (20%) 30min
7g Cascade (6%) 30min
28g Cascade (6%)15min

WLP001 Yeast
Dry Hop 14g Cascade

Basically I've replaced Northern Brewer for the Apollo, and split the flavouring hops between the cascade and apollo as opposed to all cascade in the recipe. As the AAUs of the Apollo is so high should I cut back on the hop amount? Also, how big a difference will it make if I use Safale s-04 instead of the American Ale yeast? Will this give it a fruiter twang? (I have all the other ingredients and don't really want to wait a week for the yeast)

Anyway, what do you think, could this work? Thanks in advance
 
i don't brew apa but that seemed a little hop heavy (20%aa etc) so i popped it in hopeville and it was above profile so this is 1 i did , http://beercalculus.hopville.com/recipe#

Yeah I've modified the recipe, cut down on the hops, especially the Apollo. Someone suggested brewmate so downloaded it and tinkering around. Thanks for the help :thumb:
