I have been going through my stocks, i have found 500g of vienna, 500g munich, 500g carapils, hops target, bramling x, ekg, challenger, northern brewer, cascade, citra, yeast beoirx2, cml no1x5, and notty all these need using base malts a lot of pilsner and larger malt so instead of buying more i am am going to get 2 more kegs and do a job on the fridge all ideas welcome acheers.
 
Lager malt + a bit of the others, mashed at maybe 67degC, bittered with NB and then late/dry hopped with cascade and citra with the No1 Kveik might make some kind of pale ale?

I've used that yeast myself and it leaves a citrus finish that might balance nicely with the C-hops.

That will do very nicely.

Until I saw this I was going to suggest use 500g Vienna, 180g Carapils, with whatever base malt. Cascade 20g at 10 mins and 30g at 0 mins. After fermenting for 7 days (or whatever gets you close to terminal gravity), dry hop with 40g Citra for 3 days. The CML No1 would be ideal for this.
 
Another idea...
Use all your Munich with 200g of medium crystal if you have some.

Bittering with target to 30ibu, then hop bursts at 10, 5 and 0 mins of 5g challenger, 10g Northern Brewer.

Mash at 67/68 to make it malty. Use beoir yeast. It will take a while to condition, 6 weeks? Could be a resinous malty ale with a bit of bite.

Hi Cushy i have gone with my recipe but i am brewing again saturday so i will have a play around with what you suggest cheers acheers.
 
do a triple grain ale. I do them regular and love them.I use 1 third each of base malt, Vienna and Munich, I know you have not enough to do 1 third but use the 500 of Vienna and Munich then top up with Ale malt and use about 200 of carapils then the hops of your choice probably the mix you would normally use in a fruity best bitter and use Notty or the Beoir.
When I do mine I make it under 4% ABV so it can be quoffed
 
If you like bitters and ales Rod you will like it. you could even add some cascade at the end for a little more fruitiness
