I'm resorting to dried yeast today and only have Safale S-04 and US-05 which I'm going to bung in together. I usually use Danstar Nottingham when using dried yeast and it specifies the temp of the water in which to rehydrate it on the pack. The Safale packs don't so... any idea? If all else fails I'll resort to the same as Notty which is something like 30-35degC.

They are both 27C =/- 3C. You can go to the Frermentis website and download data sheets. Why combine the yeasts?

Thanks. I did look on their web site but clearly did not look hard enough.

I'm only combining the yeast as it's all I have left. Both packets are about a year old so to ensure there are sufficient viable cells I need two packs. That and I thought why the hell not.

Just finished Orfy's Hobgoblin and am rehyrating the yeast now (in 28degC water).

Thanks again.

I'm thinking of using US-04 in my next brew. I'd found that data, but I'm surprised to see 'gently stir for 30 mins' further to 15-30 mins initial standing at 27C. That means pitching up to an hour after the yeast first hits the water. Is that right? The others I've seen have said to pitch within 30 mins of hitting the water, or the yeast will have passed it's peak.

As a side point, how continuous does the stirring have to be, after the initial 15-30 min stand?

With an 11g packet I sprinkle the yeast onto 110ml of cooled boiled water, cover with foil, leave for 15mins, then stir continuosly until all the granules are disolved, then stir occasionally before pitching, the whole process probably takes 30-45mins.
