You're talking about DMS which can add a cooked vegetable flavour to your beer. However, I am lead to believe [by Aleman] that highly modified British malts have little in the way of the precursor that forms DMS so boiling with the lid mostly on is not actually a problem.PokeHer said:I was always under the impression that keeping the lid on was really bad due to the moisture falling back into the wort.
