Well the turbo has been on for 4 days and the "Froff" has died down, do I now a put my last lot of apple juice in? And then do I just put a normal cap on? If so do I need to leave it for a while after to do some fermenting?

I usually leave the top-up until day5, been caught out a couple of times, those airlocks are a devil to clean.
It's still fermenting - for at least 4 more days - especially as you're about to add more sugar in that top-up juice - so still needs an airlock
Unless you used cloudy juice it'll clear naturally - wait for that then keg/bottle with priming sugar at 10g/litre, sneak a taste off the siphon (it'll be a bit sharp that young)
2 weeks warm then 2 weeks cold to get it conditioned, minimum.
Longer you leave it the better it'll be.
