Busy 24hrs, took advantage of a free house while herself was away at a conference and brewed 46l of a citra Ale yesterday evening and 46l of lager with Perle and Mittelfruh this morning. Hit all my numbers, 1033 for the Ale and 1034 for the lager. Should end up around 3.5% each which is where I want them. Both bubbling away at 10psi. Ale done with Voss and lager pitched onto Novalager slurry.

Did you ever have one of those stick your entire fist in your mouth moments. Something wasnt right about the fermentation of these beers, looking at my notes I've only gone and pitched my nova batch at my kveik batch temp 😳 it went into the fermenter on the 4 pack nova slurry at 28c. So focused on getting the two brews done in the space time I had I totally missed it. There's a lesson there kids but I know for sure I'd do it again 😂. It fermented out quicker than the fresh pitch of kveik...I **** you not. Had a temp probe on the outside of the keg and stayed stable at 26c 'outside' (insulated keg, let the exothermic yeast activity act as my temp control) so I'm guessing around 28/29c in the eye of the fermentation storm. It nailed the 1005 target in around 36hrs and the taste is what I can only describe as a banging clean lager even this early on! Not planning on drinking this until May so it will have decent conditioning time but blown away by how well the nova dealt with my idioticness and planning pitch two onto this slurry after racking this but that will be going in at my usual Nova 20c target. FYI the cita ale voss batch also fully fermented out in under 48hrs and is tasting fantastic. No shortage of full kegs for a few weeks
