Fairly new to all grain brewing with 4 batches under my belt. Just been going through my left over ingredients and wondered if anyone could put something together from these. Was going to have a go my self but still not confident which hops should go together and what to use for bittering, flavoring and aroma.
320g barley
200g crystal
380g chocolate
2kg oats
Loads of maris otter pale
40g ahtanum
57g fuggle
50g east kent goldings
86g mosaic
82g nelson sauvin
88g northern brewer
65g simcoe.

A few rough ideas.
English bitter maris otter + 5-10% crystal bitter with northern brewer flavour with EKG &/or Fuggles
Stout/porter add chocolate and 10% oats to above
Tropical bitter/IPA 100% maris otter + bitter with nelson sauvin flavour with a combination of ahtanum nelson sauvin mosaic and simcoe. Note ahatanums flavour is quite subtle so use in larger quantities than the others, simcoe and mosaic are similar and i personally love them but think they need another hop with them.
 
Hey, thanks for the quick replies. I have a chocolate oatmeal stout on the go at the minute. I was thinking along the lines of a blonde Ale/IPA?
Might give the Tropical bitter/ipa a go, sounds good. Any idea on the amount of hops to use?

Just had a play with beersmith and come up with this. Any thoughts?
4.47g maris otter
200g Crystal
15g Nelson (60min)
9g Nelson (30 min)
8.4g Simcoe (30 min)
8.4g Mosaic (30 min)
16g Ahtanum (30 min)
16g Athanum (10 min)

Threw the left over crystal in i had left for a bit of color.
 
or maybe
4.7kg Maris
200g crystal
100g chocolate
10g Nelson (60 min)
10g Ahtanum (30 min)
5g Simcoe (30 min)
5g Nelson (30 min)
5g Mosaic (30 min)
10g Ahtanum (10 min)
 
I would move the 30min hops to 20-15min and adjust the 60 to compensate for the lower IBUs as 30 mins don't get much of the potential flavour, bitterness or aroma, maybe add all 40g ahtanum. Just my opinion what you have would still make good beer.
 
I know it's tempting to throw it all in when you've got ingredients left over, but more often than not you're better off trying to make something simple.

How about a nice California Common ? Makes 21 Litres at 72.5% efficiency.

FG: 1.013
IBU:37 ish
IBU to OG Ratio: 0.7 ish

60 mins single infusion mash @68°C

4.7 kg of MO
.2 kg Crystal
.05 kg Chocolate

Hops
Northern Brewer 38g@ 60 mins
Northern Brewer 20g@ 10 mins
Northern Brewer 30g@ 0 mins

Fermentation

Use a true lager yeast and ferment it at around between 16-18°C for three weeks or so. I've had great results with Saflarger S23.


The recipe assumes that you're using crystal 40L and that your Northern brewer is 7%AA.

Always remember that your final beers flavour is determined by far more than just your grain bill and hop additions. Your yeast selection and fermentation are just as vital when you're trying to make a certain style.

First batch i made was very similar to this minus the chocolate and was awesome. Didnt last very long at all. Might give that a whirl on my next brew day.
