I haven't brewed anything since October, due to my wife being ill and hospitalised all over the xmas period.
She's on the mend now so I can take time out from the weekend washing, ironing etc. to start brewing again. (I have her permission, honest).
I've done a quick stocktake and have the following:

6kg MO
1.8kg crystal malt ebc 150
400g crystal malt ebc 60
500g chocolate malt
400g amber malt

50g fuggles 5.19 AA
50g first gold 7.43 AA
40g challenger 5.6 AA
40g wakatu 6.67 AA.

I'm looking to do a 25 litre brew, of something around 5%. Any recommendations?
I've got to go to my lhbs for whirfloc tabs, so don't mind buying extra ingredients.

I'm out of the habit, so just can't make my mind up :???:
 
Id use 3.5kg of MO 300g of Crystal maybe some chocolate too, First gold hops and fuggles

Thanks, I was sort of thinking along these lines. Do you think a bit of biscuit malt would go well with it? I haven't got any but as I gotta go shopping anyway, I might get some.
I remember I had a beer with a biscuity taste that I liked a while ago, can't remember what it was though.
 
Some kind of an oatmeal stout perhaps? Possibly add some lactose and make a milk stout.

Thanks for your suggestion, I'm not all that into stout though, I can't drink more than a couple of pints of it in one session. Although milk stout sounds nice, (I've never had one) I might try a small batch, should have plenty of grain left for a gallon :thumb:
 
A nice English pale ale, mo and crystal, bitter with challenger and late additions of first gold and fuggles.
What yeast do you have?
 
I've got US-05 but I can add that to my shopping list. I've not really experimented with yeast, I've only really used US-05 and gerwins ale. What would you suggest?
 
If you got another 4kg of MO and a hop selection from your LHBS and you could probably get a couple of 25L brews out of it.
 
Maybe safale 04? Not very clued up on dried yeast I'm afraid, I think that's the English one?

Biscuit wouldn't hurt it mate, go with what you reckon mate

I was going to suggest something like that (adding about 130g choc in too)

Its not a million miles away from the hobgoblin clones put out there.Whilst I often say don't try and clone your fav brews it should still make a great brew in that style..
 
Thanks for all your input. I decided in the end to go with this:
maris otter 4.5kg
crystal malt (150 ebc) 200g
buiscut malt 100g
torrified wheat 100g

1st gold 30g @ 60 mins
citra 40g @ 5 mins

fermenting with danstar windsor yeast.
For a 25l bre, brew mate said 1.043 @ 70% efficiency, I got 1.050!

Its bubbling away now. Hope it turns out ok. :smile:
