I made some cherry stone liqueur made my immersing whole cherries stones in brandy, about 1lb of stones, remnants of cherry flesh.
The liqueur is a French classic Noyau.

A father-of-three from Blackpool was rushed to hospital after consuming three cherry stones - unaware that they contained cyanide.

Matthew Creme, 28, had been enjoying the box of Suntrail Farm cherries, which he purchased from Tesco, when he decided to try a stone.

Out of curiosity, Creme bit into the stone to find a nut inside and, after coming to the conclusion that it tasted rather delicious, ate two more.

Cherry stones contain amygdalin, a compound which, when ingested, breaks down into hydrogen cyanide.

Despite no warning on the product’s packaging, within 10 minutes the call centre coach soon began to feel increasingly unwell and his temperature soared.

His partner, Georgina Mason, 23, called the emergency services and after being told that he had consumed a lethal dose of cyanide, Creme was rushed to hospital where he was promptly treated.

Symptoms of cyanide poisoning can include stomach cramps, headache, nausea and vomiting. If untreated, it can lead to cardiac arrest, respiratory failure and death.

A fatal dose can be as little as 1.5mg per kg of a person’s bodyweight

A recent study showed that the amygdalin content of apple seeds was 3mg per gram of seeds, with one seed weighing roughly 0.7g.

Apple lovers don’t fret quite yet, as not all of this would be converted into cyanide. One would have to consume a substantial number of apple pips to poison themselves.

So which fruits are the ones to look out for when it comes to amygdalin? Whilst red cherries contain 3.9mg/g of seeds, apricots contain a staggering 14.4mg/g but greengage plums are the biggest offenders, with 17.5g/mg.
 
Unless I misunderstood it, the link in Tau's post for kirsch says to smash up the stones an put them in vodka??
Peice does say crush stones, don't think you are supposed to do that just use stones whole. I wonder how many have died from that recipe I just googled that one.
 
Just started 15l of cherry wine with the last of my cherries.
Per gallon equivalent
2kg sweet cherries,
125g blueberries
800g sugar,
1 Camden tablet, crushed.
Cherries hand crushed, blitzed the blueberries with the Camden tablet sprinkled over and poured sugar over the top, Masserated for 4 days, stirring daily. Strained fruit into a brew bag, measured the quantity of juice syrup and made up to 4.5l,.
Added 5ml citric acid, 5ml yeast nutrient and 5ml pectolase. Used gervin no 2 yeast.
Returned brew bag to fv for 5 days.

All sat in a 25L brew bucket before removing the brew bag and transferring into a 15l brew bucket.

Next Christmas might know how it turns out.

My (late) mother used to make drinks which we called cherry brandy and apricot brandy. They had nothing to do with brandy, and were actually fairly strong sweet wines, rather like sweet sherry. They were incredibly good. I don't know her recipes, though they are probably somewhere within the reams of paper I've got to sort through, but there's no chance of finding them imminently. However, I know that in addition to cherries / apricots she used sultanas. Sadly I have no more - I finished the last a couple of years ago; it had been in the bottle for almost 40 years and was lovely. You could experiment: look up recipes for sherry, and add lots of cherries.
 
I love a Cherry Beer in hot weather so, as you are a beer brewer, maybe it's something you can make for next Summer!

If you search Cherry Beer in the Recipes section is gives three recipes; one of which has a "sugar" adjunct. As my local Lidl are selling Lowicz Cherry Syrup I would use this instead os sugar.
