I am still not sure on this beer but I keep going back for more. I am bottling a traditional Saison tonight with EKG. It will be interesting to compare them both. Do you think I should up the carbonation. Thank you for the review 👍

The cardamom saison is nice but does take a couple of months to condition. How as long has yours been conditioning?

It was nice at that level of carbonation, but I do like it when your pour a Dupont and it's really bubbly. Although I have struggled to get the carbonation where I would like on a lot of my Saison's.. partly because i find it hard to trust the calculators and my bottles..so I tend to go a little on the cautious side.
 
It's 6 weeks in the bottle. I struggle to hit the right carbonation. It's a fine line between getting high carbonation and gushers. I think to hit the high carbonation you need to bottle in a 330 and have loads of head space in the glass. Something like this

Last pint from a mini keg of Woodforde's NOG kit that was bottled / kegged and force carbed a little over a week ago. As expected, It's tasted a little young! but shows promise and I'm hopeful the bottles will be good in a month or so. _20201109_202526.JPG

I just checked my notes I used be-134. It started at 1.058 finished at 1.004. The Saison I bottled last night finished 1.004 as well using belle Saison. Both were pitched at 18 then once fermentation started I ramped up until I reached 27 on day 5

I have not used any of the fermentis Belgian yeast strains. Did the job, nice low finish👍
 
Some might call this ‘having a crafty one in the garage’ but I call it essential quality control... :tongue:
@Galena best bitter, a few days after kegging under 20psi. Flavours starting to come together nicely.
It worked out alright in the end then? I have to say that my first batch of this was bottled on 5th August and it is now at it's best, shame i only have 1 bottle left, but another batch is conditioning.

It's coming together nicely... perhaps slightly harsh at the moment but it's barely ten days old :-)
I find it hard to judge objectively whether it's any good, but it tastes good to me thanks!
