I've managed to get around 5kg of blackberrys from the last three days on my way to the shop. Many seem to be on their way out and there are considerably more ripe ones than I can pick with the kids sat in the pram!

so im unsure how much longer the supply will last. Still some red and green ones so maybe they'll hang around for a while longer.
these are tucked up in the freezer for now waiting to be joined by the masses of elderberrys that are colouring up at the moment.

What do you plan to do with yours? I'm
 
I went out last weekend and picked 7kg, mostly from 1 bush. There's so many more on the bushes and no one else is picking them round here :doh:

I've kept it basic so far
For 1 gallon

1.5 kg blackberries
1kg sugar
1tsp pectolase
250ml red wine enhancer
Wine yeast

I've scaled up to 5 gallons, just got to strain it all off the pulp at the weekend, not looking forward to that, I made enough mess last year with 1 gallon.
 
They've only just started round here, but got a pound today and another a couple of days back. Going to be loads soon though. Wine, jam, and bramble rum.
 
I really like the idea of the port if i can find the damsons. I've enough blackberrys at the moment for 5 gallons which should be a good quantity for saving some!

I have been looking at blackberry wine recipes but most seemed to have elderberry as well which takes a long time to mature... but one which could be drunk relatively quickly would be excellent!

Try something like 200g raisins 200g blackcurrant and a kilo of mixed blackberries and raspberries (your choice of ratio), usual extras.
 
That sounds well worth a go.

I've also just thrown together a bottle of blackberry vodka seeing as 2/3rds of a bottle has been unused for about 6 months. The Mrs should like that at Christmas.
 
It'll be Blackberry Whisky for me, although I've just found one I made last year, which is surprising - now SWMBO enjoys the homerbrew more she hasn't been hitting the whisky so much. Stick it on now then decant around Xmas time, using the spent blackberries in a crumble. :D
 
We've got masses of giant black berries at the allotment, problem is despite being black they're bitter as hell. I'm led to believe they're from the turn of last century so a very old variety, possibly beaut which I can't find reference to.
Thinking aloud, as long as they give flavour surely sugar can just be added as normal and the bitterness negated..sound reasonable...or will they have bitter compounds which may spoil any wine :hmm:

Possibly, your best bet for a good wine might be to mix them with other fruit. Mind you wine grapes are not good eaters so it may produce the best blackberry wine? YOu could brew a straight blackberry wine and if it is not nice by next year then blend it with some elderberry and strawberry or something like that :hmm:
 
Thanks A :thumb: We do have a load of damsons/white/red/black currants/gooseberries etc and were thinking of doing a blend anyway (just to make room in the freezer...probably for more fruit :lol: :roll: )..but we just fancied a single fruit wine.

It's the amount of elderberries that determines how long a wine takes to mature. They're high in tannins, which take a long time to be processed during maturation, but that also makes them ideal as a tannin source if you're only using a small amount. If I have enough, I will be freezing 4oz baggies of them to use instead of tea in next year's reds.
 
Picked 6 and a half kilos this morning.

For 15 litres I will add 6 litres of RGJ and 3kg of sugar

Might toss in a few plums off the tree too.

I have seen tincture of capsicum mentioned in conjunction with blackberrys. I am not familier with this, what does it do?
 
I picked 13 lbs today and have 16lbs in freezer. 7lbs used to make cordial for the kids and want to make 5 gallons of wine. How much blackberries should I need for that? I can't find my wine recipe book :(
