I'm going to brew up an AG BIAB Dunkelweissen kit tomorrow, looking forward to it.

What are the chances of it being ready for new year? A week to ferment and two and a bit weeks in the bottle.

Slim? No chance?

Place bets now :)
 
If you're like me and start drinking as soon as there are bubbles you'll be good :P
 
Wheat beers are best fresh (apparently, just brewed my first one) so turn around quickly, I wouldn't give it only a week in the FV unless you are taking FG readings to ensure it's finished. Think 10 days is some of my quickest. Good luck.
 
I'd say a dunkelweisen will take a bit longer than a weisen. On the basis that dark beers take longer to reach their best in general than light beers. I'd reckon on a week or 2 more at least, but I've never done a dunkelweiss (can't think why!) please report back your findings, I'll have to put it on my brewing schedule. athumb..
 
If you use US-05, you can reach FG in 4-6 days. I leave all my beers in the FV for a minimum of 2 weeks regardless when FG is reached, but I try for clear beer and good beer.

Grain to glass is absolutely achievable in 8 days when force carbing. Bottle conditioning, doable in 10 days. So I would say 10 days in FV and the rest of the time bottle conditioning for a "drinkable" beer with no podium finish:D

Temperatures are critical in meeting your deadline though.
