i'm gunna rack this today as it's hit 67% attenuation and i'll most likely not get chance to do it this weekend.

if it still wants to ferment the last bit, it can do it in the cornie with whats left in suspension :thumb:
 
just had a sample.

it's not bad. not as bitter as the last one and i reckon i know exactly why... the hops that i used hadn't been stored in the freezer and had gone a bit yellow/brown. i did run the age of hop calculator through beersmith, cos i reckoned the AA%'s were low, but i dont think i compensated enough as there's barely any bitterness to it.

lesson learned and all opened vacuum packed hops are now in the freezer :thumb:

it's actually VERY quaffable though because of the lack of bitterness. it's not sweet, just hasn't got alot of hop character. i'll give it a few more days to mature and i reckon this'll go down faster than the TaRd 2 :)
