OK I live on a farm with a fair amount of trees, I am lucky enough to have 10 very prolific walnut trees and I don't like green walnuts and there are only a certain amount of banana and walnut breads you can make!! Anyone any recipes for a walnut tipple???
 
It’s not to do with brewing but you could dry them and make walnut flour, makes amazing pancakes.....
 
I had to google this because I've never heard of Nocino before but, Nocino is a walnut liqueur

Thanks I was going to say other than Nocino as I made some last year and its really very good, it just looks awful as its a brownish green colour that almost looks like a greenish sludge but very good, and will make some more. So thanks for that it looks a similar recipe but if you thibk of anything else I will try that. I did try using the mature walnuts and soaking in spirit but was pretty awful!

That's an interesting idea I will try that and let you know how I get on! like all nuts the biggest problem is drying quickly enough before they go mouldy and don't end up like rocks if you try and do it on an AGA or similar!!

Yeah it’s one of those ideas that is only a good one if someone else carries it through....

You could try making some walnut beer, in a similar way to Nocino. Just soak some walnuts in vodka for a while to extract the flavour. Then make some beer as normal. But before you package the beer, take 1/2 a litre of it in a glass and add some drops of the walnut extract. Take a note of how many drops you add, and keep adding till you get a flavour you like. Then scale this up with the main batch of beer. I have no idea how it will taste but the above is one of the standard ways to add the flavours from fruit and spices to beer. You can even use it to add flavours like cheese and bacon to beer if you freeze the vodka and scrape the frozen fat off - it's called fat washing

Randy Mosher has a Nut Brown Ale recipe that uses walnuts.

I've never tried it but it's on my to do list as I've got a fairly prolific walnut tree in the garden.View attachment 13945
