Using different volumes in the same equipment

Hello everyone,
I've been away for a few month renovating a house of which I plan to open a micro brewery. Obviously with some practice. Before I buy my equipment I was wondering if you can use varying recipes in the same system. For example - I have a recipe that produces 5 gallons and a recipe that uses 10. I'm thinking about buying a big system but rather then mess around trying to work out different volumes and up scaling recipes can I use a large brewing system yo do small recipes or will it produce poor results due to the extra space when boiling etc. hope I explained this ok
 
Just my opinion, depends on the kit and approach you take, if using gas to boil then there isnt really a minimum brewlength, but if u use electricity your final volume MUST cover the elements in your kettle..
Beyond that its a case of considering factors such as vessel/transfer hose deadspace, and what it represents as a proportion of your brew. And if the tun volume is too large to accommodate the increased void without loosing temp when mashing a smaller volume. However when running commercially i would expect you would want to get a maximum volume of beer for each watt of energy and hour spent brewing cleaning and sanitising.

What are the brewery plans? have you beers you wanna champion or a style you wanna bring to the masses?
