Still quite new to this lark but already getting the urge to experiment.

If brewing a two can kit, can you use spray malt or beer enhancer
For secondary fermentation, and how would they differ in taste,
Or would it taste too malty???
 
Considering you are only using about 85g of sugar at this stage it makes very little difference to the taste. I don't think you would notice any difference whether you were to use Malt Extract, or sugar or Beer Kit Enhancer (which is a mixture of the 2).
 
Is there a rule of thumb for working out the sugar quantity for the second fermentation? My St.Peters Ruby Red calls for a 'small amount of sugar' for the second fermentation if using a barrel or 5g per pint if bottling.
 
For the budget barrels I believe it's around 80 grams sugar.

Slightly more for the King Keg barrels as they can handle more pressure but not sure how much sugar for these.

Someone else more knowledgeable here may know the answer.
 
80 - 100g of sugar for a plastic barrel, whether Budget or King Keg in my opinion.

I think 5g per pint is a bit much for Ale, I would go with about the same level for bottling as for kegging, so about 2.5 g per pint bottle.

I would use 5g per bottle if bottling lager as you want that more carbonated.
