Good evening,

I am following a wonderful recipe I have used many times to make (alcoholic) ginger beer. It's a quick recipe that produces as much as 5% ABV in a matter of days.

The recipe asks for 1/4 teaspoon brewers yeast for 2 litres liquid.
This time as well as the usual yeast I also bought one of those alcotec 48 hour Turbo Yeast and am going to do a second version using this instead. Mostly out of curiosity.

My question is how much to use. Where I am confused is the back of the packet says for a 40 litre amount of liquid, use the entire sachet of 135g. This is a very different yeast to liquid ratio from my base recipe (3g/litre) compared to just 0.5/litre. What's this about?

Any advice on what sort of quantities to use would be really appreciated. I am not looking for 20% strength, more in the 8 - 10 region.

Thanks!
Henry
